~Ginger Chocolate Chip Pumpkin Muffins~

Early mornings in October.  A slight chill to the air, clear/sharp light, and the taste of delicious pumpkin muffins with ginger and chocolate~


~1 cup sugar
~1/2 cup olive oil
~1 cup pure pumpkin puree
~2 eggs
~1 1/4 cup flour
~1 tsp baking soda 
~1/2 tsp salt
~1 tsp pumpkin pie spice
~1 tsp ginger
~2/3 cup chocolate chips
raw sugar for sprinkling on top

Stir sugar/oil/puree/eggs until well mixed.  In separate bowl mix dry ingredients.  Gently fold into wet and mix until just incorporated.  DO NOT OVER MIX!  Gently stir in chips.  Spoon into oiled muffin pan and sprinkle sugar on top.  Bake in preheated 350 degree oven for 19 min.
