~Dark Chocolate Orange Cupcakes~

That most beloved season is almost up us!  FALL!!
Citrus and chocolate go together like multi colored leaves and pumpkins.  
This is a simple cupcake with a no-frills ganache frosting.  Not the fanciest but definitely the most luxurious of tastes!


~ 1 cup strong brewed coffee with 1 cup dutch process cocoa whisked in (room temp)
~1/2 cup room temp butter
~ 1 1/8 cup sugar
~2 eggs
~1 tsp orange extract
~2 1/3 cup flour
~1 tsp baking soda
~1/2 tsp baking powder

~ 10 oz good dark chocolate
~ 1 cup half n half
~1 tsp orange extract

Cream butter and sugar until light and fluffy.  Add eggs one at a time and extract. (you cannot overbeat at this point)
Mix dry ing together and add in 1/3's alternating with coffee/cocoa mixture starting and ending with dry.  (Be very careful NOT to overbeat at this point)  Bake at 350 for approx 19 min (DO NOT OVERBAKE!)

Place chocolate in mixing bowl.  Heat milk on stovetop until just starting to steam and bubble at edges (NOT BOILING).  Pour over chocolate and let sit for 10 min.  Whisk until smooth and add extract.  Dip tops of cakes in ganache.
Refrigerate any unused ganache and scoop into balls for truffles when set.
