I know... always with the leftovers, but there are cans of strange and obscure stuff lurking in the back of our pantries. Where the heck did two cans of yams come from? We don't eat yams, no, not even during Thanksgiving. Yet, there they were.
So, what do we do when the pantry presents us with an offering of two aluminum cylinders of unknown origin? Uh...we make pie.

Rustic Sweet Potato Pie
~2 cans yams (so weird)
~1 can evaporated milk
~enough whole milk added to evaporated to make 1 1/2 cups
~1/2 Cup sugar (increase if yams aren't already sweetened)
~3 eggs
~1 1/2 tsp pumpkin pie spice
~single pie crust
Mash yams and mix in remaining ingredients. Pour into 9x9 and top with crust. Brush with egg and sprinkle with sugar. Bake 350 degrees 60 minutes. (tent with tinfoil if crust starts to brown too much) Top with broiled marshmallows if desired. Enjoy, but remain perplexed...

I have never had sweet potato pie but this post is making my mouth water. It looks so delicious!
ReplyDeleteMmmm how wonderful that looks! Especially with those beautifully toasted marshmallows on top! I've never tried sweet potato pie but it looks great!
