Cinnamon Roll Cupcakes
This great idea came from the 'Creative Cupcake Genius' over at Hoosier Homemade. For Cupcake Tuesday she made cinnamon roll cupcakes and I thought "what a great idea!" So, I pulled out my cinnamon roll recipe and away I went! These are definitely going on my holiday menu at SugarBeams, I think they would be a great present to have delivered to someone on Christmas Eve!
Milk and butter to 125 degrees.

After second proofing and ready to go into oven!
Smell O' Vision, we need Smell O' Vision...
Ice while hot and then top with more icing when cool.

CINNAMON ROLL CUPCAKES
~1 Cup milk
~3 Tbsp butter
~3 1/2 Cup flour
~1/2 Cup sugar
~1 egg
~1 packet of Rapid Rise Yeast
~ 1/2 tsp salt
~1 1/2 Cup packed brown sugar
~4 Tbsp cinnamon
~3/4 stick of butter
~8 oz cream cheese
~2 Cups powdered sugar
~1 stick butter
~1 tsp vanilla
~1 tsp lemon flavoring (no alcohol)
Heat milk and butter to 125 degrees. Transfer to mixer and mix in 1 cup of flour, sugar, egg, yeast and salt. Mix on low for 2 minutes. Add rest of flour and mix until ball forms. Knead on floured surface for 7 minutes. Transfer to oiled bowl, cover and let rise in warm place for 2 hours.
Roll out to rectangle. Spread butter over dough and sprinkle sugar and cinnamon over butter. Roll up on long side and cut into approx 12 rolls. Place in liners in cupcake pans, cover and let rise again for 45 min. Bake at 375 degrees for 19 min.
Mix all icing ingredients together and spread a little while cupcakes are hot, then pipe the rest over cooled cupcakes.

Those are some serious, towering cupcakes there! It always irritates me how cinnamon rolls bake together into one giant mass of dough, so this is a good solution.

ReplyDeleteBittersweet: This recipe (minus the liners) is my plain ol cinnamon roll recipe and it doesn't stick all together they stay fairly separate, if you ever want to use it! :-)

ReplyDeleteThanks Jess! These are the easiest cinnamon rolls I've ever come across, just eliminate the 'cupcake' process and put in 9x13 and bake for same amount of time if you just want to make plain ol' cinnamon rolls ;-}
